  Easy Broccoli Cheese Soup

  Ingredients:

  4 cups chicken stock
  3 cups fresh broccoli, cut into 1/2 inch pieces
  1/3 cup butter
  1/3 cup flour
  2 cups milk
  1 cup shredded cheddar cheese
  1 carrot peeled and cut into chunks
  1/4 teaspoon cayenne pepper
  1/4 teaspoon ground nutmeg
   

  Directions:

  Trim broccoli. Cook broccoli and carrot in chicken stock until just barely tender. Cool slightly. Save a few broccoli chunks to garnish soup with. Pour rest into blender or food processor and puree. (may need two batches)
  
  Make a roux: Melt butter in a large saucepan. Add flour, pepper and nutmeg. Stir constantly over low heat for several minutes, using a whisk to break up clumps. Add milk, a little at a time, stirring in each addition and breaking up any lumps.
  
  Add cheese and melt slowly in sauce over low heat. Stir in the vegetable puree. Heat through and serve.Garnish with reserved broccoli pieces.
